
I love fresh fruit. You just feel better when you eat good fresh food. Don't you think? This was so refreshing when we had been working hard in the hot sun all day. Perfect for a summer side dish or just a snack. Use whatever fruit you have on hand and make sure to let it chill before serving. It wont thicken up, but it's much better cold.Fruit Soup
1 C Water
1/4 C sugar
3 1/2 TBL minute tapioca
Boil together until tapioca is clear, stirring constantly for a smooth texture. Pour into a big jar & add 6 oz frozen OJ and 2 1/2 C water. Stir. Add 1 can Mandarin oranges, drained, 2-3 bananas-sliced, 1 qt peaches sliced & any number of strawberries.
